Easy Banana Cake Recipe!

Soooo easy to make and great to share with friends and family over a cuppa we give you our healthier take on a banana cake…

We’ve left out the refined sugar (castor sugar) which has no nutritional value and substituted with coconut palm sugar, which is an unrefined sugar. Unrefined sugar retains much more of sugar’s natural nutrients such as calcium, magnesium, and iron. We’ve used Organic Coconut Palm Sugar by Indigo Nutrition: Low Glycaemic Index and helps support normal blood pressure & circulation.


  • 120g unsalted butter
  • 80 – 100g coconut sugar
  • 1 x generous teaspoon vanilla extract
  • 1 x free range egg
  • 2 large ripe bananas, mashed
  • 190g self-raising flour
  • 65ml milk
  • Nuts or seeds to sprinkle on top


  • Line a loaf tin with parchment paper. Melt butter, coconut sugar and vanilla in a saucepan over a medium heat.
  • Remove from heat and add the mashed bananas and mix.
  • Add the whisked egg – mix well.
  • Stir in the flour and the milk.
  • Pour into the prepared tin, for an added crunch topping sprinkle a teaspoon of coconut sugar over the top. Add a generous sprinkle of any type of seeds and nuts. Our favourite is either pumpkin seeds, sesame seeds, walnuts, almond flakes or all four!
  • Bake at 180 C / Fan 160 C / Gas 3 for 35-40 minutes, or until a skewer comes out clean.
  • Allow to cool, cut into slices and enjoy!
